sooo i was bored yesterday and had nothing to do...and too lazy to go out etc.etc. of my endless excuses...i went on flickr for random flower pics...and i found a strawberry cream puff pic. it looked sooo good and my sugar craving these days just won't listen to me these days...i decided to look for the recipe...found it...its a fairly easy recipe...so i thought i would make it since i have all the stuff i need in my kitchen.
first step was to make the dough. fairly simple...just boil the butter, salt, sugar, and water and put the flour in...and stir until it becomes a dough that won't stick to the sides of the pan...cook for a few minutes to reduce the moisture in the dough. let it cool down for a couple of minutes. put the cooled dough into the mixer and add eggs (one at a time) there is no instruction on how many eggs i should add...since it really depends on how large the eggs are and how moist the dough is (the drier the dough, the better it absorbs the eggs which in turns puff up more when its baked) i stopped at 4 eggs when the dough felt glossy, heavy and consistent.
here comes the hard part...i've never done any piping with a pastry bag in my life before. i figured ohh it should be easy...its just squeezing the dough from the bag. what i didn't realize was the amount of dough i had made. i figured i would get one tray of puff pastry. but after piping one full baking tray of the dough...i came to a horrible realization that my dough was not even half empty yet -____- my hands were already hurting from holding the pastry bag in certain way for piping. but i can't stop...or else what am i supposed to do with the rest of the dough...i can't just turn it into a cake the next day...the composition is different. so i had to keep piping and piping...it took me over an hour to get 4 trays!!! i piped about 110 mini puff pastries in total (each tray fits about 30 - 35) the puffs came out nicely after 25 minutes in the oven...totally paid off my hard work.
now to the filling!
the recipe calls for pastry cream which needs whipped cream and i don't have at home. i thought i could make my own by using the mixer but i didn't have any heavy cream at home...the only thing i found in the fridge was a box of half and half. so i had to trash that idea and came up with my own filling...i found some cream cheese (regular and peach) so i decided to make cream cheese mousse. whipped up an egg white first then added the cream cheese with some lemon juice along with some sugar...it tasted great! but the texture is not firm enough to pipe into the pastry so i had to leave it in the fridge for about an hour...thennn finally started piping the mousse into the puffs. they were delicious!! would i ever make them again??? maybe i will...depending on how much time i have. cuz this thing took me a whole evening to make. but it was worth the time and effort. it is a dessert after all and no one would say no to it! =P
